You’ll love this Raw Chocolate Cake recipe – so simple!
Try it for Valentine’s Day…
Ingredients:
CAKE LAYERS:
3 cups walnuts
2/3 cup cocoa or carob [I use raw cacao powder]
1 pinch sea salt
1 cup dates, pitted
FILLLING:
¼ cup honey
3 ripe bananas
1/3 cup cocoa, carob or raw cacao (I use raw cacao powder)
raspberries, strawberries, cherries, mandarin oranges or other fruit that goes good with chocolate
TOPPING:
1½ cups raspberries, strawberries, cherries or other fruit
4-5 Tablespoons dark chocolate, grated (optional – it’s already pretty rich with chocolate)
Finely shredded unsweetened coconut (optional)
Place all CAKE LAYER ingredients in a food processor and blend well into a soft sticky paste.
Divide the mixture in half and form 2 balls. Place the balls into the refrigerator.
Place the FILLING ingredients into your food processor and mix well into a smooth paste.
Place 1 cake ball into a cake form and spread it out evenly. If you don’t have a cake form, you can press it into an even round layer between 2 sheets of wax paper and place on a cake plate or platter.
Spread a layer of filling (1/2 of the filling) over the cake.
Sprinkle some raspberries or chopped strawberries over the filling and press them in gently.
Press the 2nd cake ball into an even round layer of the same size as the first. Press it between 2 pieces of wax paper and then transfer it on top of the existing cake/filling/fruit layer.
Put some parchment paper on a large plate and turn the cake upside down onto the plate.
Garnish with remaining chocolate cream, fruit & toppings of choice.
